Amgylchedd bwyd
Bwyd wedi'i brosesu'n ultra a pwysau'r corff
Mae'r cysylltiad yn gryf, cyson ac wedi'i ailadrodd ar draws adolygiadau ymbarél. Beth mae'n ei olygu, a beth mae "wedi'i brosesu'n ultra" yn ei ddynodi, yw cwestiwn anoddach.
Beth a ddarganfuwyd gan yr adolygiadau
Mae adolygiad ymbarél gyda meta-analyses diweddar [1] a adolygiad ymbarél parallel o ganlyniadau iechyd negyddol [2] ill dau'n adrodd cysylltiadau cyson rhwng mwy o dderbyn bwyd wedi'i brosesu'n ultra a chanlyniadau gwaeth ar draws llawer o benodolion. Mae meta-analyses wedi'u canolbwyntio yn cwmpasu risg obesiti ymhlith oedolion [4], digwyddiad obesiti a chyflyrau cysylltiedig [5], risg canser [3] a statws iechyd cyffredinol [6].
Mae'r cysondeb yn wirioneddol syfrdanol. Mae cyfeiriad yr effaith yn sefydlog ar draws poblogaethau, penodolion a dulliau dadansoddi.
Cysylltiad â chanlyniadau negyddol
Y broblem achosol
Mae bron pob un o'r tystiolaeth hon yn arsylwi, ac mae derbyn bwyd wedi'i brosesu'n ultra wedi'i gysylltu â bron pob penodolyn iechyd arall — incwm, addysg, tlodi amser, mynediad i fwyd, cyfleusterau coginio, galwedigaeth. Mae addasiad ystadegol yn lleihau cymhlethdod; ni fydd yn ei ddileu, yn enwedig pan fo'r cymhlethdodau'n cael eu mesur yn gormod ac mae'r derbyn yn cael ei fesur gan gwestiwn cyfeirnod bwyd.
Mae'r tystiolaeth achosol gryfaf yn dod o waith bwyta rheoledig lle bu pobl yn bwyta mwy o galorïau a chynyddu pwysau ar ddeiet wedi'i brosesu'n ultra nag ar un heb ei brosesu'n gyfatebol, er gwaethaf prydau wedi'u cyfateb ar gyfer macronutrientau a galorïau a gyflwynwyd. Mae hynny'n astudiaeth fach o fewn ysbyty — yn wybodaeth fanwl, ac un astudiaeth.
Y mecanweithiau dderbyniol
- Dwysedd egni. Mwy o galorïau y ceg, ac mae maint y rhan yn cael ei reoleiddio'n fwy gan gyfaint nag gan egni.
- Cyfradd bwyta. Mae gweadau meddal, isel mewn ffibr yn cael eu bwyta'n gyflymach, ac mae signalau llunio llun yn oedi ar ôl derbyn.
- Disodli ffibr. Mae deietau wedi'u brosesu'n ultra fel arfer yn llawer is yn ffibr.
- Hyper-balatability. Cymysgeddau penodol o fraster-sugar-salt sy'n brin yn y bwydydd cyfan.
- Disodli. Mae pob pryd wedi'i brosesu'n ultra yn bryd nad yw'n rhywbeth arall.
Nodwch fod y rhain yn bennaf yn fecanweithiau o fwyta mwy, sy'n cyd-fynd â'r canlyniad bwyta rheoledig ac yn cysylltu'r llenyddiaeth hon â'r cyfrif egni cyffredin yn hytrach na'i ddisodli.
Beth i'w wneud gyda hyn
Mae'r cyngor ymarferol yn goroesi'r ansicrwydd achosol, oherwydd mai'r un cyngor y byddech yn ei roi beth bynnag yw: mwy o fwydydd cyfan, mwy o ffibr, mwy o goginio gartref lle mae'r amgylchiadau'n caniatáu. Beth nad yw'n goroesi yw'r fframwaith anoddach — mai bwyd wedi'i brosesu'n ultra yw'r peth sy'n wenwynig yn unig, neu mai cynnyrch penodol yw peryglus oherwydd ei gategori NOVA yn hytrach na'i gynnwys.
Mae hefyd yn bwysig bod hyn yn broblem strwythurol yn sylweddol. Mae bwyd wedi'i brosesu'n ultra yn rhad, yn sefydlog ar y silff, heb angen unrhyw offer nac amser. Mae cyngor i'w osgoi yn gyngor i wario arian a phan fydd llawer o bobl ddim yn ei gael.
